They source the freshest produce from farmer’s markets, or they grow it in their Urban Garden “out back”, or grow it at they’re farm location affectionately known as “Actinolite North”. The Globe and Mail’s Chris Nuttall-Smith calls Actinolite “one of the most essential places to eat in Ontario, if not Canada” and they’ve already been named on one of Canada’s 100 Best Restaurants. Obviously, Chef Justin Cournoyer is well on his way to being a leader in sustainable eating in Canada.
