Chef/Co-Owner Teo Paul of Union & Cote De Boeuf

At Union, they’ve said they are “farm-to-chef-to-table”. Teo should know, he has a farm too. Of course some of the produce comes from the farm up north, but they rely on their friends too. They have great relationships and create daily menus based on the best stuff they can get from their community of farmers and suppliers. Union has even gone to the effort of opening their own butcher, Cote De Boeuf, a few doors down, which conveniently doubles as a bar. They elegantly say, “they do it this way, ‘cause it’s the way it should be done”.
